Good evening! It’s the end of another crazy day and I’m officially in prep time for the cruise! I had a midterm tonight which means I got out of class super early! I ran around picking up random toiletries and such, then went to the grocery store to grab a butternut squash for my dinner and some fruit for the rest of the week’s Green with Envy smoothies!
Some of you have asked where Evan and I are going on our cruise next week for Spring Break. We’ll be on the Carnival Imagination visiting Key West, FL and Cozumel, Mexico! SO EXCITING!
Good news: I’ll have daily posts for you all to read while I am gone! You’ll hear about where we’re going and what we’re going to be seeing all along the way. When I get back I’ll have recaps with all of our pictures and (I hope) some awesome cruise food photos too!

I had a really great day of eats and I can’t wait to share them with you! Overall they were really simple and filling. Let’s back up to breakfast...
Again I grabbed a Cinnamon Raisin Ezekial english muffin topped with Mara Natha Raw AB before running out the door to my internship. Yummm….
For lunch I split a Dark Chocolate PB and Raspberry Preserves sandwich on Sesame Ezekial (no pic) with my teaching partner. We also split a Dark Chocolate Coconut TLC bar (she forgot her packed lunch and I was more than happy to share!)
When I got home around 1:30 PM, I finished my lunch off with a Green with Envy smoothie. Check it out:
(the creamscicle looking mixture is almond milk and carrot juice) Today was a day of sharing because I ended up bringing that small cup to let my teaching partner try in class tonight. She’s been asking me about my green smoothies and whether or not I could taste the spinach. Well, you saw how much I threw in there, right?! She said she didn’t taste it at all! She also said it was really good! Seriously, if you have not tried these yet, there’s nothing to be afraid of! I’m even starting to crave them because they are so good.
While I sipped on my large smoothie, I got working on some Organic Honey Flax Almond Butter. I combined in my food processor:
- 2 cups organic almonds (about 3/4 lb.)
- 2 tbsp. organic ground flax
- drizzle of organic honey
This was a lot easier than I thought it’d be. I literally just threw everything in and let my food processor do the rest! Occasionally I would scrape the sides because the AB would get all balled up. Here are pictures of what it looked like along the way…
I immediately spread out some on a piece of Jenna’s toasted Honey Oatmeal Bread. Delicious, sweet honeyness!! It’s a little thick and I’m considering throwing it back in the food processor tomorrow to thin it out. We’ll see!
Dinner was a delicious smorgasbord of fantastic food! I had a whole butternut squash worth of fries (gahhhhh…SO GOOD!) and a Amy’s California Burger on more Honey Oatmeal Bread with Extra Sharp Cheddar Cheese, organic spinach and organic ketchup. After I cooked the burger, the sandwich was broiled on high for about 4 minutes to melt the cheese and get the spinach gooey like I like it.
I can’t even begin to tell you how much I love these fries. I could eat them every day for the rest of my life…they’re that good. YUM!
Dessert was my last square of Rapunzel 70% Cacao Dark Chocolate 😦
I’m off to write a paper…yuck. The only good part of it is that it’s my last assignment I have to do before the cruise! Spring Break couldn’t get here faster!!!

OK, I am totally making my own almond butter!! (ha, I may not have a free moment to do so for a couple weeks, but I’m doing it!)

Wow, thank you for showing the pics step by step! I know that if I tried to make the butter, I’d probably get nervous not knowing what it’s supposed to look like throughtout the process. Your cruise sounds like a dream!!!

gahhh everytime i read one of your posts i seriously drool on my desk! the pics are sooo fabulous! i want to try making some of my own almond butter soon! do you roast your almonds or buy them preroasted??

i was totally gonna ask u about the creamsicle looking thing :D! Have SOO much fun, i went on a cruise to mexico from CA for spring break junior year with my best friend- it was only 3 days but it was SOOO so fun omg i’m excited for you!!

The green smoothie sounds delish!
I also love the nut butter – I make my own all the time. When I sweeten it, I opt for fresh organic date paste (home made) or raw agave nectar because I’m vegan and don’t consume honey.

I can’t get over all of the great looking foods in this post.
You definitely can’t taste spinach in smoothies, I love it! I haven’t done that in a while ago, I need to start whipping up some smoothies again!
And that honey flax almond butter looks amazing. I’ll have to try that combo asap!
