Hi everyone! Welcome to Day 3 of our cruise!

Catching up?

Today Evan and I are in Cozumel, Mexico!!! Neither of us have every been to Mexico before and we’re so excited to go to another country for a few hours. We’re here from 1:00 PM until 10:00 PM. We’re planning to visit Chankanaab National Park for some snorkeling and Mayan ruins, as well as hitting up the markets for some shopping! I’m also hoping to have some awesome chips ‘n salsa and margaritas today! It’s a good thing today is a cross-training day. I’ll probably get in some awesome swimming time in the CARIBBEAN! Have you ever been to Mexico? If so, where, and what did you do?

Today’s guest post comes from fellow blogger and rower Bec from Live, Love and Peanut Butter. She wrote a great post on making overnight oats! I’ve been wanting to try this out for awhile so I know I’m happy to have this resource! Thanks, Bec! I also thought her post was totally appropriate for today because she’s also visited Cozumel (see her picture below). Enjoy and leave this girl some love!

Hi! It is Bec from Live, Love and Peanut Butter, doing a guest post for the lovely Ryan while she is away on her vacation at sea.  While thinking about what I would write about for my very first guest post ever, I decided to take some advice I have often heard from my English professors: write on what you know and what you love.  So today, I bring you Bec’s Ultimate Guide to the Ultimate Overnight Pumpkin Oats. The STAR ingredients: Milk (or milk substitute), Oats, Pumpkin puree and Cinnamon

oats-1

Add a third of a cup of oats and a quarter of a cup of pumpkin to your favourite breakfast bowl
oats-2

Then mix in a third of a cup of milk and a quarter of a cup of water
oats-4

Sprinkle generously with cinnamon
oats-5
Now your Pumpkin Overnight Oats are ready for their sleepover in the fridge
oats-6

Simply wake up in the morning and pop that bowl of goodness in the microwave for two and half minutes.  Take it out, stir and add your favourite oat fixings… granola, nuts, chocolate chips, peanut butter (my favourite) or whatever you think would taste good and ENJOY!

I will leave you with a picture of my sister and I from our trip to Cozumel (one of the islands Ryan will be visiting) this Christmas.  Hope everyone is having a great day!
