I hope you all are enjoying the new looks around here! Every time I go to my blog I get so excited…I just love the way it turned out!

On another note, I owe you foodies some updates!


Breakfast: Arnold’s Thins Toast (half with Earth Balance, half with Raspberry Preserves), PB Puffins/Kashi Honey Almond Flax & pineapple, OJ, calcium and multi-vitamin


Lunch: Kashi 7-grain crackers with Sabra hummus, Strawberry banana smoothie (glass and a half) with protein.

Dinner: half of an Amy’s Pizza (split with my teaching partner who thought it was wonderful too!), pineapple, cucumber slices




Breakfast: Another PB Puffin/Kashi mix with soy milk and a glass of OJ



Mid-Morning Snack: More pineapple and a Kashi Tasty Little Chewie bar. I also slipped in some hot chocolate because it was 20 degrees this morning and I was COLD.



Lunch: Non-Dairy Amy’s Burrito topped with salsa and LF sour cream.


Dinner: Okay, I admit my dinners are getting kind of lame this week. It’s just that the last thing I want to eat when I get home from class at 7 or 8 PM is something heavy an hour before I have to climb in bed. I’m way more into the breakfasty foods at this time. So tonight I had Vanilla Chobani topped with lots of cinnamon and Bear Naked Fruit and Nut Granola (LOVE this stuff!). This is like dessert…yum! I also had Arnold’s Thin Toast with Earth Balance on top. I was really wanting some good old-fashioned toast!




Last, but most certainly not least, bake sale announcements! You might have seen me featured in Meghann’s Meet the Bakers post this morning. To catch you up, I volunteered to bake something to help Meghann raise money for her Team in Training San Diego Marathon on May 31st that will be benefitting the Leukemia and Lymphoma Society (if you haven’t already, you can still help her out by visiting her donation page…it takes just minutes to make a difference!)

So what am I baking?! As Meghann stated, it’s a little out of season, but the weather is still chilly and I think it’s totally appropriate! From Cooking Light, I introduce to you, Peppermint Cheesecake Brownies!

Speaking of all things Meghann, I get to meet her this weekend! She graciously invited me to her birthday dinner at Seasons 52 and I get to go! It just so happens that I’ll be in Tampa on Saturday seeing He’s Just Not That Into You with one of my bests, Callyn, and it’s convenient for me to drive through Orlando on Sunday afternoon for the dinner! Yay! I also get to meet Caitlin from Healthy Tipping Point, and catch up with Lindsey from Mrs. LC (I haven’t seen her since HIGH SCHOOL!). Talk about an amazing meet-up! I’m absolutely SO excited and can’t wait to tell you all about it on Monday 🙂

Alright, it’s bed time for this girl! I did not get nearly enough sleep last night after my marathon lesson planning session. G’night!
