Hi everyone! Tonight’s post comes from a very worn out, exhausted Chasing Daylight. These long days truly make me feel like I am literally chasing daylight–trying to get anything and everything I possibly can, done before the sun goes down. There’s just not enough time in one day! I really feel like I’m going and going from 5 AM to 10 PM and somehow I’m still playing catch-up.

For example, I worked my butt off yesterday, taking advantage of nearly every minute of my day doing something. Somehow it became bed time and I hadn’t done a writing assignment for my class tonight! Normally this would be okay because I have a pretty substantial chunk of time between interning and my PM class, but today I had a lesson planning meeting during that time. Luckily, we finished somewhat earlier than expected and I had an hour to knock out the assignment. Stressful, though!

Since I feel like I have no time, I’m losing sleep either catching up or worrying about not sleeping. I know it sounds strange, but I’m not falling asleep when I try to go to bed because I’m worrying about how much sleep I’m missing with every minute that ticks by. Merciless cycle. Anyway, it’s caught up to me and I am definitely feeling exhausted right now.

Regardless, I was able to hit the mat this morning with 15 minutes of AM Yoga and tonight with one of my DVD’s from the collection I formed during my yo-yo exercising days! This one comes from Gaiam (I love them!) and is called Core Cross Train with Rodney Yee. It starts with 30 minutes of a Core Strength routine followed by 30 minutes of restorative yoga (!!). Today was “stretch and strengthen” day in my 10K plan so I figured what could be better than more yoga?

I ended up doing the 30 minute Core Cross Train part and it was definitely a great workout! A lot of it was on the ground which is my favorite kind of yoga. I like Cobbler’s Pose and Staff Pose more than Proud Warriors and Triangles. I’ll definitely be incorporating it into my weekly routine I think (hopefully with the second 30 minute restorative yoga part next time!).


Today I fueled my exhausted body starting with a nice (smaller) bowl of oats. I often have trouble eating the 1/2 cup portions so I went for 1/3 cup today. Much better! My oats had:

  • 1/3 cup rolled oats
  • 1/3 cup water
  • 1/3 cup Silk Vanilla soy milk
  • 1 banana
  • cinnamon
  • 1 pack of Truvia
  • sliced almonds
  • Bear Naked Fruit and Nut granola


Overall, so very yummy and it was definitely the perfect portion for me! I had 5 sliced strawberries on the side:


I forgot to snack during my resource period because I was really preoccupied with other things. My teaching partner and I went to a place in Gainesville called Adam’s Rib Co. for lunch. I got a pulled pork sandwich with a side of green beans and small side of fries. I was so so hungry by the time I got to sit down and eat it that when I remembered to take a picture it was half gone. I haven’t had much “take out” food over the last month and these are the first french fries I’ve had since my winter break! It was really yummy but definitely left me with a heavy, uncomfortable feeling in my tummy that I haven’t experienced in awhile.

My mid-afternoon snack was a bag of grapes during class, along with 5 Triscuits and cheese that my classmates brought today. Yum!

Dinner is a variation of my Easy Bake Ravioli. In this one I added spinach and thin-sliced zucchini to the layers. I’ve been experimenting with spinach and my stomach since this weekend when I had it in an omelet. When I as younger I had some digestive issues with spinach and I’ve decided to revisit this veggie and see if it still bothers me. So far, so good! I grew out of my tomato allergy, so maybe I grew out of this too?! Exciting if I did, because spinach is so good for you! I’ll keep you updated. This lasagna was very very yummy! Lots of flavors and awesome cheesy-ness. I only felt like having a small amount (not too hungry tonight).



Dessert was a teeny dipping bowl full of Mango Sorbet….delicious!


It’s relatively early (9 PM) but I am SO ready for bed! Goodnight!
