HAPPY FRIDAY!!!

You have no idea how difficult it was for me to wake up this morning! I went to bed three hours past my bedtime after watching the Gators come out on top last night! For anyone who didn’t watch the game, the final score was UF: 24, OU: 14 and it was a nailbiter to the very end! Coming to UF was the best decision I ever made! My freshman year our basketball team won their first national title. My sophomore year, our football team won their second national title and our basketball team won another national title. Now, my senior year, a third national title for the football team! That’s four titles in four years! Unbelievable! I’ve had a very unique college experience because of this and it’s something I will never forget! It’s great to be a Florida Gator!!!

Backing up one more time, I wanted to post the recipe for the dip I made last night. Evan’s mom made this dip one time I was visiting and I LOVED it. I make it the least fattening way possible and it’s still so very tasty. It’s also ridiculously easy to make and involves no heating or cooking. It was a big hit last night and was gone before anything else! Sorry I don’t have a picture of the layers, I got caught up in the pre-game festivities!

Black Bean Salsa Layered Dip

  • 8 oz. bar of Neufchatel cheese (1/3 less fat cream cheese)
  • 1 jar of Newman’s Own Black Bean and Corn Salsa (I’ve tried other brands and this is the best one)
  • 4 oz can of green chiles
  • 2% Mexican style shredded cheese
  1. Spread cream cheese on the bottom of a 9 X 9 inch (or similar) casserole dish.
  2. Layer salsa on the cream cheese.
  3. Layer green chiles on the salsa.
  4. Sprinkly desired amount of cheese on top*
  5. Serve with tortilla chips, bagel chips, pita chips, crackers, etc… (I use tortilla chips)

*For a healthier version, leave the shredded cheese off the top. I add this to make the dip look pretty, but it’s not necessary. If you leave it out of your recipe, you might have to coax guests into trying the dip because its brown and green and looks gross. Once they taste it though, it won’t matter what it looks like!

I was very slow waking up, getting out of bed and getting ready this morning. I was really dragging and couldn’t even bring myself to think about making breakfast. This gave me some extra time, so I left my house 15 minutes early, got some gas, and headed to Starbucks for a Perfect Oatmeal and a decaf soy caramel machiato. Just what I needed! Yummy goodies and a relaxing drive to my internship. I’ve had the Perfect Oatmeal twice now and I must say, it really is perfect! You get your choice of milk and they give you brown sugar, dried fruit, and sliced almonds to mix in. It’s perfectly portioned and kept me full until lunch time (7AM – 12PM)! Yes, I could have made my own oatmeal this morning but sometimes I’ll do whatever it takes to have a little extra motivation to get going in the morning. Please ignore the poor quality of my pictures today…most were taken with my cell phone.

This afternoon I went to work and the twins were fast asleep (phew, I needed a break!) While my brain wasn’t working this morning I forgot to pack a lunch so I made a Healthy Choice meal and served it with a clementine.

I don’t usually eat things like this and I especially don’t usually cook things in plastic containers (BPA alert! Evan deserves all of the credit for my BPA awareness), but like this morning, I was feeling a little desperate. This meal is actually pretty good but it’s also very close to what I’ll likely be eating for dinner tonight: leftover stir-fried rice. Oh well, take what you can get, right?

Today’s mid-afternoon snack and Mindful Moderation was a bagel and cream cheese! The girls were getting mini whole wheat bagels with whipped cream cheese on top for lunch today. I was starving and I haven’t had a bagel with cream cheese in awhile, so I had half of one mini bagel, toasted, with a little cream cheese. It was the perfect amount to satiate my craving and it tasted amazing!

When I got home from work I was still starving and not sure when dinner would be so I snacked on a Mountain Mix Clif Mojo bar. I am in love with these bars. I think the chocolate chips make them for me. Soooo delicious!

Tonight will be the first night Evan and I get to spend alone in almost a month! I can’t wait to spend some much needed quality time with him. I don’t know what we’re doing yet, but it will probably be low key and relaxing, as it’s been a long week for both of us. And the best thing about it being Friday? Tomorrow is Saturday and I get to sleep past 6 AM!!!!!
